Try out this two step recipe. This elegant appetizer is simple, healthy, and delicious!
1 15 oz. can of chickpeas
1/4 cup of sunflower seeds (de-shelled, roasted, and unsalted)
4 tbsp. of vegan butter
2 tbs. Tahini sauce
1/2 tsp. stone-ground spicy mustard
1 tbsp. maple syrup
1/4 cup of diced red onion
1/4 cup of diced celery
1 tsp. garlic powder
3 tbsp. fresh dill (finely chopped)
Salt and pepper (to taste)
5-10 lettuce leaves
Step 1: Pick & Mix
Once you have collected all of your ingredients, in a medium sized bowl, pour in chickpeas, sunflower seeds, red onion, celery, and dill. Pour softly melted butter into the bowl, then Tahini sauce, spicy mustard, and maple syrup. Lastly, season with garlic powder, salt, and pepper. Mix ingredients together until they are thoroughly distributed.
Step 2: Scoop & Enjoy!
Lay out the lettuce leaves on a flat plate or platter. Scoop 1 to 2 tbsp. of the chickpea salad into each leaf and just like that, bon apetite!
Note: this salad recipe can also be served on its own, with scallions rather than dill, and/or be spread on bread complimented by avocado.
